Maido's tasting menu is a succession of dishes that dialogue between Japanese techniques (fermentation, fish cutting, dashi) and Peruvian ingredients (ají amarillo, huacatay, Humboldt Current fish, Andean tubers). History and context

Nikkei cuisine emerges from the settlement of Japanese migrants in Peru from 1899 onward. Facing unfamiliar ingredients, they adapted their techniques to Peru's biodiversity. A century later, this fusion becomes a globally recognized culinary style. Mitsuharu Tsumura, trained in Japan and the United States, opened Maido in 2009 and made it the contemporary ambassador of this tradition.
