Causa Rellena (or Causa Limeña), a delicious potato-based appetizer

Causa rellena, or causa a la limeña, is a classic dish from Peruvian cuisine, a traditional starter that many restaurants feature on their menus. This dish, made from mashed potatoes seasoned with lime and filled with various ingredients, is truly delightful—both visually and gastronomically. The finest restaurants offer causa rellena creations that are sometimes stunning in appearance, inviting immediate indulgence!

The origins of causa rellena in Peruvian gastronomy

Causa a la limeña is a dish deeply cherished by Peruvians for centuries. Indeed, since pre-Columbian times, the Incas enjoyed this mashed potato preparation blended with chili peppers. Other elements, such as avocado, eggs, or fish were added to the preparation in a more rudimentary fashion.

It was during the Viceroyalty of Pérou that cooks began refining the recipe and preparation, adding lime juice, mayonnaise, and all the ingredients found in today's version. The form of causa rellena also adapted to modern-day Peruvian cuisine, taking on sleek, geometric shapes with true design sensibility.

A quick lesson in Peruvian cooking: The causa rellena recipe!

Ingredients for causa rellena or causa limeña

  • 1.5 kg of potatoes for puree (papa Amarilla)
  • 2 limes
  • 4 hard-boiled eggs
  • 1/4 chicken or one can of tuna, your choice
  • 1/2 orange-red chili pepper
  • 1 red onion, thinly sliced
  • 8 olives
  • mayonnaise
  • 1 cup oil and salt

Preparing the causa rellena or causa limeña

Before you begin, note that this preparation will depend on the type of causa rellena you wish to make: with chicken, with shellfish (shrimp, crab), or with tuna. Adjust the recipe according to your choice.

1. First, cook the yellow potatoes, preferably (papa amarilla), for 35 minutes, then peel and mash into a puree. Salt the puree.

2. Boil an orange chili pepper for 5 minutes to reduce its heat and make it easier to peel. Peel the pepper, remove the seeds, and blend it with a few tablespoons of water until you achieve a smooth puree.

3. Combine both purees together and incorporate lime juice and oil to create a workable paste, similar to modeling clay in consistency. Let it rest.

4. Depending on the recipe you've chosen, shred your chicken, crumble the tuna, or shell your shellfish.

5. Spread your potato puree onto plastic wrap to about 2 cm thickness, then brush the surface with mayonnaise. Add pieces of chicken, crab, or tuna according to your choice, followed by cubes of avocado and sliced onion. Cover everything with a second layer of potatoes of the same thickness.

6. At this point, the shape you wish to create for your portions is entirely up to you: rectangular (simply cut), round (use a cookie cutter), or tube-shaped (roll everything on the plastic wrap and cut into rounds). Once you've decided on your shapes, brush the top layer of potatoes with mayonnaise and top with pieces of egg, olives, or small bits of chili pepper for garnish.
